Biryani vs pulao, what's the difference?

Biryani and pulao both combine rice with meat or vegetables, but they are made in different ways. A clear explanation of layering, dum, spice and texture.

They look similar on the plate: rice, meat or vegetables, a scattering of herbs. But to anyone who grew up with them, biryani and pulao are completely different dishes.

The short answer

Pulao is cooked in one go. Rice, meat or vegetables and spices simmer together in a measured amount of liquid, often a stock called yakhni, until the rice absorbs it.

Biryani is built in layers. Rice is part-cooked separately in plenty of boiling water, then layered with a richly spiced meat or vegetable mixture and finished slowly in a sealed pot. That last step is called dum.

Four differences you can taste

1. Layers. Spoon into a good biryani and you’ll find white rice, saffron-coloured rice and pockets of masala. Pulao is evenly coloured all the way through.

2. Spice. Biryani is heavily spiced: whole spices in the rice water, a marinade of yogurt and ground spices, fried onions and saffron. Pulao is gentler, often seasoned with just whole spices and stock.

3. Texture. Biryani rice is long and separate, slightly firm. Pulao rice is softer and has soaked up its liquid.

4. The occasion. In much of South Asia, pulao is everyday food. Biryani is the dish for weddings, Eid, birthdays and Sundays.

Where Hyderabadi biryani fits

Questions

Is biryani spicier than pulao?
Usually. Biryani uses more whole and ground spices and often chilli, while pulao is gentler and more subtly flavoured. Both can be mild or hot depending on the cook.
Is fried rice a pulao?
No. Fried rice starts with cooked rice that is stir-fried. Pulao cooks raw rice in a seasoned liquid until it absorbs it.
Which is healthier?
Pulao generally uses less fat than biryani, which is finished with ghee and fried onions. Portion size matters more than the dish.
